The 48-Year Gap
The can opener is the greatest example I can think of of a solution arriving long after the problem.
The story starts with Napoleon. In 1795, the French government offered a 12,000-franc prize (roughly $300,000 today) to anyone who could develop a reliable method for preserving food for the military. A Parisian confectioner named Nicolas Appert spent the next 14 years figuring it out. His method — heating food in sealed glass jars — won the prize in 1809 (NPR: Why Napoleon Offered a Prize for Inventing Canned Food).
A year later, English merchant Peter Durand took Appert’s idea and put it in metal. He patented the tin can in 1810 — a wrought-iron container lined with tin, designed to keep food preserved indefinitely (Britannica: Peter Durand).
There was just one problem. Nobody had invented a way to open it.
Hammer and Chisel
Those first cans were not what you’d call user-friendly. The walls were made of wrought iron up to 3/16 of an inch thick — thicker than most modern car doors. The official instructions for opening one were: “Cut around the top with a chisel and hammer.”
That’s not a metaphor. People literally hammered a chisel around the rim of the can.
Soldiers used bayonets. Sailors stabbed cans with knives. Some accounts suggest frustrated customers just threw cans against the ground until they split open (Connecticut History: The First US Can Opener). It was desperate, dangerous, and for almost fifty years, nobody thought to improve it.
Why? Because the cans themselves were a novelty. Early canned food was mostly military rations and expedition provisions. The average household wasn’t buying canned food. It wasn’t until can manufacturing got cheaper and the iron walls got thinner that the need for a dedicated opener became obvious to anyone outside a military commissary.
By the 1850s, iron cans were being replaced by thinner steel cans. And finally, someone bothered to fix the problem.
The First Can Opener
Ezra J. Warner of Waterbury, Connecticut patented the first can opener on January 5, 1858 (Wikipedia: Ezra Warner). His design looked like a weapon — a curved blade attached to a pointed bayonet. You stabbed the bayonet into the center of the can lid, then rocked the curved blade around the rim, cutting a jagged line through the metal.
It was cumbersome. It left a sharp, dangerous lid. But it worked.
The U.S. military adopted Warner’s can opener during the Civil War. Soldiers could finally open their rations without a hammer. Civilians, however, mostly got Warner’s device handed to them at the general store, where shopkeepers would open the can for you before you took it home. The device was too awkward and dangerous for most households.
The Cutting Wheel
The real breakthrough came in 1870, when William Lyman of Meriden, Connecticut patented a can opener with a rotating cutting wheel (Wikipedia: William Lyman). Instead of stabbing and cutting, you pierced the lid with a sharp point, then rotated a wheel around the rim. Smoother. Safer. The basic mechanism every handheld can opener still uses today.
But it still had a problem. You had to manually hold the cutting wheel against the rim while turning the crank. Get distracted for a second and the wheel slipped off, leaving you with a half-open can and a fresh frustration.
That wasn’t solved until 1925, when the Star Can Opener Company added a second, serrated wheel. This “feed wheel” gripped the rim from the other side, keeping the cutting wheel locked in place as you turned the crank. One hand, consistent pressure, smooth rotation. The modern can opener was born.
Electric Can Openers
The first electric can opener was patented in 1931 by Preston C. West. It could open over 20 cans per minute but never really caught on — early electric motors were expensive, and a manual can opener worked just fine for the 2-3 cans a week most households opened.
The electric can opener as we know it — the wall-mounted, magnetic-lid-holding version — was introduced by the Udico Electric Can Opener Company in the 1950s and became a standard American kitchen appliance through the 1970s and 80s. You probably remember your grandmother having one under the upper cabinets.
Today, you can get can openers that open cans silently, open them from the side so the lid is smooth (no sharp edges), or open them with a single touch. The battery-powered, one-button models are the current peak of a device that started as a chisel and a hammer.
How Many Cans?
Americans use approximately 68 million steel food cans every day — more than 25 billion per year. Add in beverage cans, and the number pushes past 130 billion annually (Can Central). That’s roughly 400 cans per person per year. Almost every one of them gets opened by a descendant of Warner’s 1858 invention.
The irony is not lost on me. A machine that opens containers has evolved from a hammer and chisel to a device so refined you can operate it one-handed, blindfolded, in the dark, without thinking. And the container it opens has remained functionally identical for over 200 years.
Why It Took So Long
The 48-year gap between can and can opener isn’t a failure of invention. It’s a demonstration of how invention works. Nobody built a can opener until enough people needed to open cans regularly enough for the problem to be worth solving. The first cans weren’t for home use. They were for the military, for explorers, for long sea voyages — situations where you had soldiers or sailors who could improvise with the tools they already carried.
It took the can becoming an everyday household object — thinner, cheaper, available at the corner store — for the can opener to become an everyday household tool.
The next time you open a can of beans in five seconds, remember: for nearly fifty years, the answer was a hammer.
